Good morning all!  It’s been quite a busy New Year so far.  Before I get into what I have been doing I am EXCITED to say that my fitness journey has paid off again!  I am down another 2 pounds, making this a whopping 16 pounds now.  I’m so happy with this program.  As much as I loved the 21-Day Fix program, I think I am now in heaven doing the Les Mills Combat and Les Mills Pump workouts.  Drinking Shakeology everyday is another reason for my success.  I can’t stress how much this helps in your nutrition, energy, and weight loss, and not to mention it helps lower blood pressure and cholesterol.  Well, enough about that and off to the good stuff.
I’ve been running like crazy getting things done. I have managed to completely listen to two audio books while driving in to work so far. Have to laugh at that one.  They are personal development oriented and hopefully I will gain some insight to different views and wisdom.  The books are titled “The Go Giver” and “The 7 Habits of Highly Effective People” and I will probably listen to them again sometime this year.  I do have “The Compound Effect” on the way.
I have also been riding my horse, but being careful too.  I finally went to the doctor yesterday about the shoulder injury from my fall off of my big guy.  Nothing was definite so he is sending me to an orthopedic and will update later.  I did stop working out a few days ago because of this too, but since no broken bones were found I will be back at it tonight when I get off work.  Yeah! 
I also started my Masters program this week.  I’m not liking the course at all, yet.  I have never been a researcher and this is the first mandated course of the program. I’ll manage though.  I’ve also been working on the Emergency Management plan for my unit and the training that is needed also.  This is bigger than I had expected and taking more time too.  For the likes of me, I have no idea how I get things done. 
Well, signing off for now.  Oh, but before I do I am going to add a new recipe that a dear friend gave to me.  I joined a “Healthy Crockpot” group on FaceBook this week too.  One of the recipes is posted below and a photo of what I did with the beef roast that we made. What an incredible recipe!  I have altered it a little for my taste, but putting the other ingredients here for you to use.  
Balsamic Glazed Beef Pot Roast
3 lbs Beef Chuck Roast
2-3 TBL Coconut Oil
1 cup beef broth
½ cup balsamic vinegar
1 T. honey
1 T. soy sauce
1 T. Worcestershire sauce
½ tsp. red pepper flakes
½ medium onion cut into slices or chunks
1 cp carrot cut into 1” pieces
Clean beef roast, removing most of the fat.  Rub with coconut oil and sear beef roast over high heat in skillet.  Place in crockpot.  Cover with remaining ingredients and cook on high for 4-6 hours or fork tender.   This will depend on the size of your roast and cut of meat.  Remove from crockpot when done and either shred beef or pull into chunks.  Drizzle remaining juices over to keep moist. 
For keeping and freezing, portion into individual ¾ cup sizes ,which is equivalent to the Red container of the 21-Day Fix meal plan.  Drizzle them with some of the remaining juices and then freeze these for later use.  As you can see I placed mine on top of salad greens and dressed with an avocado salad dressing.

New Years Day!

Well today is the New Year and I have several things in store that I want to implement this year.  Happy New Year to everyone!  First and foremost is to continue my workout programs with Beachbody and work on my fitness goals.  Other goals are of course in store and here is a small list of what I came up with. 
Pray more
Become more fit
Eat Cleaner and Drink more Water
Start Masters program (Scheduled for Jan 5th start)
Start SCW program (Military)
Get DRT up and running (Military)
Understand DUC roles (Military)
Understand Weapons Department (Military)
Get Rusty more in tuned to riding
Get Rusty back in buggy
Get Rusty a new friend (he’s so lonely)
Get a new job and relocate!
Buy our farm! And start living the good life!
Help others achieve their fitness and nutrition goals!
Pay for Shakeology by increasing business with BB
Make Emerald status
Make SC5/10
Make Ruby and or Diamond by years end
Become more financially secure
Invest more
Somehow incorporate more personal development into life!
And of course there are a few I’m gonna keep to myself… LOL
In the meantime I am working on dinner today.  Yes for myself, no one else here. I am going to try to get over to ride my big beautiful horse Rusty again today. He’s such a character and I love him dearly.  John said yesterday he might have a friend for him coming, but we will see if the deal comes through.  Signing off for now and will try to touch base later this week.

Clean Eating Idea

I want to share one of my favorite recipes.  It is for a Mexican Shredded Beef that I make in a crockpot and then portion and freeze for quick easy meals.  It is a staple in my house and I absolutely love the versatility of it.  You can use it as it is, place over a bed of lettuce, use it for burritos, etc.  This is a great way to use the clean eating methods, especially if you use grass-fed beef and organic products. 

Mexican Shredded Beef:
Beef roast, any size–I used about a 3# for this and this one was an eye of round with ALL fat trimmed off, place in crockpot with 16oz salsa (homemade if possible) 4oz green chilis, about 4 carrots cleaned and cut into 1″ sizes, about 4 stalks celery cut into 1” sizes, 1/2 diced onion or 1-2 TBL dried onions, 2TBL ground mustard, and 2tsp black pepper. Cook on low for 10 hours. Pull beef out and shred with forks, add remaining mixture over top and mix in. Depending on how your crockpot cooks, you might need to add more salsa for liquid.
Steamed Spaghetti Squash: Cut squash in half and remove seeds, cover each side with saran wrap (or you can put a plate cover on it), place in microwave for about 8 minutes. Test with fork to see if soft and then remove squash from skin with forks. You can add 2 TBL Parmesan cheese and 1 TBL parsley for flavor.
Sliced Sweet Potatoes: Peel and slice sweet potatoes, fry in saute pan with 1-2 TBL coconut oil until desired tenderness.
Portion beef using “red” 21-Day fix containers and freeze for later meals making this meal even easier to complete.

Welcome to my journey to reaching my fitness and nutritional goals for myself and for others. 
A few years ago I noticed my health in a downward spiral when I came back from my Iraq deployment.  I started getting severe migraines that doctors were not able to control. They continued to get worse and I noticed I was getting somewhere around 20+ a month.  This prevented me from working out like I used to and the weight started adding up.  I was subscribed medication after medication and felt like a guinea pig because nothing ever worked.

When I felt better I did aerobics or went running, but it wasn’t enough and was way to sporadic.  I tried every diet program out there and while some things worked, the weight always came back.  As a Navy Reservist we are required to perform our bi-annual physical fitness test, which includes either a weigh-in or BCA where you are taped to figure out your body fat. I had to start doing this a couple years ago and although I passed with the taping method I still felt humiliated. 

This past summer I really wanted to pass my fitness test without being taped.  I came across an online support group through Facebook that provided coaching, mentoring, motivation, support, nutritional guidance, meal plans, meal prepping and so much more.  I don’t know why but I knew it was going to work and I couldn’t hit the “like” button fast enough on the post and send the person a message letting her know my “why”.  I guess I impressed her enough because I landed my spot in her free coaching group!

I found out the program used Beachbody’s workouts like P90x, Insanity and others but this time it was the 21- Day Fix.  I had never heard about it and although I didn’t want to buy yet another program to sit on my shelf with the rest of my collection I decided to give it a go.  Then it was the shock factor about the price.  GULP!! Ouch! This was going to be pricy but again… something in the back of my head told me this was going to work.  I did it.  I bought the 21-Day Fix challenge pack with the Chocolate Shakeology.  I wasn’t happy about the shakes. I don’t like them; I didn’t agree with them, I’m not good at drinking things like this… BUT…. it was part of the program that something in my head was telling me “it’s going to work”. 
Fast-forward a little.  Once I figured out some recipes with the Shakeology I was hooked.  Here are a few of my favorites.  Peach Cobbler, Pumpkin Pie, Chocolate Reece’s Peanut Butter Cup and more.  Going through the first 21- Day Fix I only lost a few pounds, which was unlike many others who lose anywhere from 7-15 pounds in 21 days.  Because I had a ‘good’ diet already I didn’t have to take out the bad stuff which many times is the reason for much of the weight loss. I decided to do the program again and lost a total of about 8 pounds or so.  I became hooked because of the energy I had from the Shakeology and workouts.  I wanted more so I rolled right into the P90 program and am now doing a hybrid workout of the Les Mills Combat and Pump. 
Because of my success I have decided to become a Beachbody Coach myself and help others to reach their goals while I continue work on my own.  I’m starting this blog to show my commitment to myself and to others who follow it.  No, not all posts will be this long but I wanted to give a little background of my purpose.  My goals are to post at least 3 times a week, if not more and will be a paragraph or more.  Join me in my journey.  Come find me on Facebook, Instagram, and Pinterest and lets do this together.
